Last night, I tried roasting sweet potato and it came out so heavenly I shall be doing it again next week – as soon as I get to buy the main ingredients at Waitrose.
The inspiration came when we dined at The Farm and it was good I bought sweet potatoes a day before that. It’s really very simple and if you are not up to frying them, here’s what you can do.
2. Peel sweet potatoes and cut lengthwise or bite size whichever is your preference.
3. In a bowl, toss them with extra virgin olive oil.
4. Arrange in a shallow baking dish and bake for 45-60 minutes turning twice or thrice to get even brown appearance.
